I was totally planning to share my monthly menu, but then I got invited to be part of a freezer meal group, and that kind of screwed up my month last month. I say that in the greatest way-- it was awesome!- but it caused me to seriously stray from my menu.
So I'm just sharing this week, instead of the whole month.
Monday: Grilled Chicken Salad. Made with romaine lettuce, grilled chicken breasts, sliced tomato and cucumber, and ranch dressing
Tuesday: Black Bean Pesto
Wednesday: Cilantro Lime Chicken
Thursday: Dr. Pepper Beef
Friday: Shredded beef enchiladas using the leftover roast
Saturday: Homemade pepperoni pizza
Sunday: Leftovers
